Things I didn't burn part 1

I have been cooking, a lot actually. I have started cooking again because A. We cannot afford already cooked food and B. Making food from home is healthier aka will make me skinny. I am not sure if that last statement is true, but its my motivation. Since I have been slaving away in the kitchen every day of my recent life I decided I would let you in on what I have been feeding my people. It has been going very well. Dear Lord I hope I didn't just jinx it.



So here are some things I have NOT, I repeat I have NOT burned. I have set off the smoke alarm a few times, but that was only because I was unaware of the vent above my stove. Who knew? This is the first in a series of recipes I have stumbled onto and not failed at. We actually eat these things and none of these are mine. I am not that creative, but like Dan always says, I know crap when I see it.....or should that be eat it......oh no, this has taken a turn. I think you know what I mean. I really can't salvage that.

Anywho, food number one is curry chicken. It is soooooo good, and completely simple. This is a recipe from a guy I know who I am about to make fun of so I won't mention his name. Needless to say he was impressed with himself when he served this to me and the fam, but not so impressed when I asked for the recipe. His wife assured me it had taken him years to perfect. I felt privileged. Either way its tasty and it didn't take me a decade to get it right.



You get some chicken and cut it up into bite size pieces. Then you cook it in a pot with some oil. Simple enough right? Now you just start dumping things in the pot. You have to add a can of coconut milk, a whole package of S&B curry powder (shhhhhh! Its the secret ingredient). I like the medium. Then you add a bunch of veggies and some water. I like water chestnuts, bamboo, mushrooms, and carrots. You can use canned versions or fresh. It depends on how much credit you want for dinner. You cook it all down until the carrots are not rock like anymore. YUM! Then you put it over rice.



I need to say something about rice here. I always thought rice was really hard to make. I thought if you needed an appliance to make it (ie. rice maker, bread maker......) that I should just leave it alone. How wrong I was! Turns out you just need water. The easiest and best tasting rice in the world is jasmine rice. I have never burned or screwed it up. Not even once. It smells amazing and makes me feel all fancy serving it with my food. Plus the name is pretty. White rice, you are officially replaced. Now bread is another disaster that I may share at a later date, but we are talking about food I have done right. Lets go with that. Anyway that is the super secret, time tested curry recipe. My family inhales it. Lisa thinks it would be better with pineapple. Lisa is wrong and pineapple can go hang out with white rice. They can talk about how they will never make it into my curry. The pineapple relationship is also another blog. I have strong feelings ok?! I hope you make the curry. You will not regret it and you will look like a dinner time hero.

that is...pineapple, cilantro, tomatoes, red peppers, zucchinis and peanuts...but yours is still pretty tasty nonetheless:)
